successful and popular.. It's the primary grape of most of the top vineyards in France and graves districts. It's also the source for most of California's red wines. Cabernet Sauvignon became internationally recognized first through its prominence in Bordeaux wines where it is often blended with Merlot and Cabernet franc Cabernet Sauvignon's reputation for excellence has made it popular around the world. There's been heavy planting (which continues) in chile, australia, and eastern Europe, especially Bulgaria. . Cabernet Sauvignon has also begun making inroads into spain and italy in areas where local grapes have dominated for centuries.

History and origins

For many years, the origins of Cabernet Sauvignon were not clearly understood with many myths surrounding it. The origins of the word "Sauvignon" is believed to be derivative of the French sauvage meaning "wild" and refer to the grape being a wild vine native to France. Until recently the grape was rumored to have ancient origins, perhaps even being the grape used to make ancient Roman wine. This belief was widely held in the 18th century, when the grape was also known as Petite Vidure . Other theories included the possibility that the grapevine originated in the Rioja region of Spain.

In 1997 researchers at university of california davis determined that Cabernet Sauvignon is an offspring of sauvignon blanc and cabernet franc. Since Cabernet Sauvignon appeared in the late seventeenth century prior to plant hybridization practices, UC Davis scientists believe that its origin was a natural occurrence rather than a planned cross of the two parents. This union turned out to be viticulturally historical.

It is the most widely planted and significant among the five dominant varieties in France's Bordeaux region, as well as the most successful red wine produced in California.

Long thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc.

Cabernet sauvignon berries are small, spherical with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and able to withstand some autumn rains with little damage. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.

The best growing sites for producing quality wines from Cabernet Sauvignon are in moderately warm, semi-arid regions providing a long growing season, on well-drained, not-too-fertile soils.

Typically, Cabernet Sauvignon wines smell like black currants with a degree of bell pepper or weediness, varying in intensity with climatic conditions, viticulture practices, and vinification techniques.
